Baked Potato Peel Chips

Save the peels of your potato for this tasty treat!


INGREDIENTS: 

  • Peels from 6 large potatoes

  • 2 tbsp butter, melted

  • 2 tbsp olive oil

  • 1/2 tsp salt (or more to taste)

  • 1/2 tsp black pepper

  • 1 pinch paprika

  • 1 pinch dried oregano

  • Optional: 2 tbsp chopped chives

INSTRUCTIONS:

  • Preheat oven to 400 degrees F.

  • Thoroughly dry the potato peels with a paper towel.

  • Pour the melted butter, oil, salt, pepper, paprika, and oregano over the peels

  • Lay peels onto a baking sheet and roast for 15-20 minutes, flipping halfway through until crisp and golden.

  • Optional: sprinkle over the chives and some more salt, toss, and serve.
