Banana Bread

Banana Bread is the perfect recipe to use up any overripe bananas you have instead of tossing them like most people would do. In fact, the riper the banana, the better because the extra sweetness will impart more flavor in the bread! This has been a recipe I've constantly referred to during quarantine with all the overripe bananas I've had just laying around. Make it once and have a few slices for breakfast or as a lovely snack! Feel free to substitute the brown sugar for white sugar, but brown sugar is definitely preferred.


INGREDIENTS: 

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup butter

  • 3/4 cup brown sugar

  • 2 large eggs

  • 2 1/3 cups mashed overripe bananas


INSTRUCTIONS:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

  • In a large bowl, combine the dry ingredients: flour, baking soda, and salt.

  • In a separate bowl, cream together the butter and brown sugar with a hand mixer. Stir in the eggs and mashed bananas until well blended. Add the mixture of dry ingredients little by little until well combined.

  • Pour batter into prepared loaf pan

  • Bake in preheated oven for 60-65 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let the banana bread cool in the pan for 10 minutes, then turn out onto a wire rack.
